Baking doesn’t have to be about using lots of sugar and butter to create delicious results – there are plenty of delicious alternatives. In this hands-on class, the recipes are free from refined sugars and wheat, and we will be using seasonal ingredients sourced locally including The Medicine Garden! You will take home everything made from the day in addition to recipe sheets. We will be discussing the benefits and different qualities of using alternative ingredients to achieve delicious results that will help from a both dietary and nutritional perspective! Sourdough is one of the most ancient forms of bread making, and also the most satisfying! Using a starter to replace yeast in the recipes, this gives the unmistakable tang and texture to sourdough breads. We have teamed up with the brilliant Kate Ampomah, owner of Eat & Mess, who runs baking classes in London and Kent, to launch a mini-series of Sourdough baking. Depending on your experience of baking, you can sign up to part 1 for beginners and/or part 2 for intermediate level bakers.
Class 1: 2nd July- for complete beginners will include: Making starter to take home, making sourdough focaccia, garlic dough balls and pain au levain
Class 2: 16th July for intermediates: Attendees need to bring a pre baked sourdough loaf and some starter with them for discussion in workshop. We will make a classic miche loaf, an olive rye sourdough boule and a rosemary fougasse
