Maddie’s Summer Salads

Salads goes perfectly with sandals, pimms and bbq in the evening sun. They are what we all crave after a long and dark winter. Maddie will show you how to make healthy and delicious salads for perfect summer entertaining. Featuring nourishing recipes so you can entertain your guest with a guilt-free menu that does not compromise on flavour. Clean and Free from Sweet Baking with ‘Eat & Mess’

Baking doesn’t have to be about using lots of sugar and butter to create delicious results – there are plenty of delicious alternatives. In this hands-on class, the recipes are free from refined sugars and wheat, and we will be using seasonal ingredients sourced locally including The Medicine Garden! You will take home everything made from the day in addition to recipe sheets. We will be discussing the benefits and different qualities of using alternative ingredients to achieve delicious results that will help from a both dietary and nutritional perspective! Please note that we will be using nuts in this class. Skills learnt include:
gluten free flours and their differences
sugar and dairy alternatives and their effects in baking
making caramel
general baking and decorating theory
layering and decorating cakes, including palette knife and piping

Midsummer Feast and Crown Making

Friday 23rd June
Early bird price £45 per person (before 15 May), general admission £50 per person (not including drinks)
The evening will begin with crafting midsummer-crowns, followed by a feast of traditional Scandinavian flavours. We will also be selling a selection of Swedish craft beers and Blid & Hatton’s own flavoured aquavit. The traditional buffet will include home-baked flat crackers, traditional cheeses, hot smoked salmon, varieties of herring, classic savoury tarts, new-season organic potatoes, and fabulous desserts. Easy Dim Sum

The term ‘dim sum’ refers to a vast array of bite-sized dishes typically eaten over a long brunch and served with tea. Whether savoury or sweet, dim sum dishes can be prepared in a number of ways (usually steamed, fried or baked). Making dim sum doesn’t have to be complicated and this class will give you the opportunity to learn a skill that will soon become a household favourite snack! In this class you will be making a variety of dim sums, including traditional ‘potstick dim sums’, vegetarian dim sums, Sui Mai – open top steamed pork and prawn dumplings and gyozas. You will be able to take home a box of your own hand-made dim sums to enjoy for dinner! Book now.

Ceri Jones: Vegetarian Summer Feast

Natural Chef Ceri Jones combines her passion for healthy food and nutrition with a love of cooking, exploring new recipes with fresh, seasonal ingredients, and teaching. In this vegetarian workshop Ceri will show you how to make seasonal produce the star of the show whether that be for canapés, mains and sides or a light, yet scrumptious dessert.This menu would be perfect for summer entertaining, but elements from each dish can stand alone perfectly for delicious mid week dining. The menu features naturally gluten free flours and ingredients like buckwheat and almond flour, tips on working with these and other ingredients will be covered during the workshop. Bec Dickinson: Picnics and Summer Lunches

What should I eat for lunch? If you’re fed up with reaching for a sandwich or your bog standard salad – here is your chance to get inspiration for making your lunch the best part of your day! Get in to the habit of creating delicious, yet nutritious lunches that works as well when you’re on the go as they do at home. In this fun workshop, Food Stylist and Writer Bec will share her inspiration for how to make lunch your favourite meal of the day! The workshop will bring you an array of ideas for planning fabulous picnics out in the wild as well as delicious lunches at home, covering topics such as: lunch in a jar, odds and ends into lunches and the afternoon slump and sweet fixes. Fantastic Fish with Jordy

Wouldn’t you love to know how to properly fillet a fish and get inspired to try out new fish dishes? It’s easy to end up in a rut of cooking salmon, but this is your chance to add to your summer feast! Join Jordy for a day in the Food Studio where you will learn some important knife skills and the knowledge needed on how to prepare fish, gutting, skinning and filleting. The fish used will be of highest quality and freshly collected from the Billingsgate Fish market that same morning! You will also be able to take away a good quality filleting knife. You will create a variety of delicious dishes that you can replicate at home, using techniques like curing and hot smoked fish and fresh fish combined with seasonal veg.
